Crustless Vegetable Ham Pie

Ingredients

  1. 1/4 c. butter
  2. 1/4 lb. mushrooms, sliced
  3. 1 garlic clove, minced
  4. 1 medium zucchini, sliced thinly
  5. 1/4 c. chopped onion
  6. 1 c. diced, cooked ham
  7. 4 eggs
  8. 2 c. Ricotta cheese
  9. 1 c. shredded Monterey Jack
  10. 1 (10 oz.) pkg. frozen spinach, thawed and drained
  11. 1/2 tsp. dill weed
  12. salt and pepper

Directions

  1. Preheat oven to 325°.
  2. In large frying pan, melt butter and saute mushrooms, garlic, onion and zucchini until tender, approximately 2 minutes.
  3. Add ham and cook 1 more minute; set aside.
