Southwest Taco Dip

Ingredients

  1. 2 (15 oz. each) cans black beans, drained and rinsed
  2. 3/4 lb. ground raw turkey
  3. 1/2 c. chopped onion
  4. 1 tsp. chili powder
  5. 1 c. bottled salsa
  6. 1 c. shredded Cheddar cheese
  7. 1 (8 oz.) container sour cream
  8. 3 Tbsp. chopped fresh cilantro
  9. 1/4 tsp. salt
  10. 1/4 tsp. pepper
  11. 1 avocado, chopped fine
  12. 2 plum tomatoes, chopped fine
  13. 2 green onions, sliced
  14. tortilla chips

Directions

  1. Combine beans, turkey, onion and chili powder in a skillet. Cook over medium heat until turkey is brown.
  2. Stir occasionally to mash beans and break up turkey.
  3. Stir in salsa and place in microwave-proof dish.
  4. Sprinkle with cheese and microwave on High 1 to 2 minutes until cheese is melted.
  5. Combine sour cream, cilantro, salt and pepper and spread on top.
  6. Sprinkle with avocado, tomato and green onions.
  7. Serve with tortilla chips.
  8. Makes 7 cups.
