Fresh Tomato Aspic

Ingredients

  1. 2 envelopes unflavored gelatin
  2. 2 c. cold water, divided
  3. 2 chicken bouillon cubes
  4. 1 c. tomato juice
  5. 2 Tbsp. lemon juice
  6. 2 Tbsp. dill weed
  7. 1 tsp. salt
  8. 1/2 tsp. hot sauce
  9. 1/4 c. chopped green onion
  10. 2 c. peeled and chopped fresh tomatoes
  11. 1 c. peeled, seeded and chopped cucumbers
  12. lettuce (optional)

Directions

  1. Soften gelatin in 1 cup cold water; add bouillon cubes. Place over
  2. low
  3. heat, stirring constantly, until gelatin and bouillon cubes dissolve.
  4. Remove from heat and add remaining 1 cup
  5. water, tomato
  6. juice,
  7. lemon juice, dill weed, salt, hot sauce and green onion. Chill gelatin mixture until consistency of unbeaten egg white.
