Italian Pasta And Bean Soup(Pasta E Fagioli)

Ingredients

  1. 1 clove garlic, crushed
  2. 3 Tbsp. oil
  3. 1 (16 oz.) can tomatoes or 2 c. chopped fresh tomatoes
  4. 2 (13 3/4 oz.) cans beef broth
  5. 1 Tbsp. minced parsley
  6. 1/2 tsp. salt
  7. 1/4 tsp. fresh ground pepper
  8. 1/8 tsp. basil
  9. 1/8 tsp. oregano
  10. 1 (16 oz.) can white beans, drained
  11. 1/2 lb. Ditalini pasta or Elbow pasta, cooked "al dente"
  12. Grated cheese

Directions

  1. In medium saucepan, saute garlic in oil just until it begins to brown.
  2. Add tomatoes, beef broth, parsley, salt, pepper, basil, oregano, and beans.
  3. Simmer uncovered, 20 minutes.
  4. Stir in pasta to heat.
  5. Serve with grated cheese and crusty Italian bread.
