Eugene'S Chicken

Ingredients

  1. 1 jar chopped beef
  2. 1 (8 oz.) pkg. cream cheese
  3. 1 can cream of chicken soup
  4. 1/4 c. sherry
  5. 12 chicken breasts, boned and skinned
  6. 1 small can mushrooms
  7. 1 (8 oz.) sour cream

Directions

  1. Sprinkle beef in bottom of casserole.
  2. Place chicken breasts on top of beef.
  3. Pour chopped mushrooms over chicken.
  4. Mix cheese, sour cream and chicken soup in blender; pour over chicken.
  5. Cover with foil.
  6. Bake at 350° for 1 hour.
  7. Remove foil; add sherry and bake 45 minutes to 1 hour more.
