Chicken Spinach Patties
- 1 boned and skinned chicken breast (into chunks)
- 1/2 slice whole wheat bread
- 1/4 c. thawed spinach (frozen)
- 1 egg yolk
- 1/2 tsp. salt
- 1 Tbsp. vegetable oil
- Put all ingredients except vegetable oil in a food processor and process until finely ground.
- Form small patties and saute in oil in medium skillet over medium-high heat.
- Flip until brown on both sides 1 minute.
- Serve when cool.
