Eggplant Casserole

Ingredients

  1. 1 medium eggplant, peeled and sliced
  2. 1 1/2 c. cracker crumbs
  3. 4 eggs
  4. 1/2 tsp. pepper
  5. 1 1/2 c. grated sharp cheese
  6. 1 1/2 c. milk
  7. 1 tsp. salt
  8. 1 stick margarine, melted

Directions

  1. Preheat oven to 325°.
  2. Cook eggplant until mushy; drain.
  3. Add all ingredients, reserving 1/2 cup cheese, 1/2 cup crumbs and small amount of butter.
  4. Mix well.
  5. Pour into baking dish; sprinkle with reserved cheese, cracker crumbs and melted butter. Bake at 325° for 25 to 30 minutes.
