Mama'S Fruit Cake

Ingredients

  1. 2 lb. candied pineapple
  2. 2 lb. cherries
  3. 1/2 lb. lemon
  4. 1/2 lb. orange
  5. 2 lb. seedless raisins
  6. 1 lb. currants
  7. 1 tsp. soda
  8. 3 tsp. cinnamon
  9. 3 tsp. allspice
  10. 3/4 tsp. mace
  11. 3/4 tsp. nutmeg
  12. 1 lb. light brown sugar
  13. 1 lb. butter
  14. 1 c. pecans
  15. 1 c. flour for dredging
  16. 4 c. flour for mixing
  17. 1 c. syrup (sorghum)
  18. 1 c. grape juice
  19. 1 pt. strawberry preserves

Directions

  1. Cream butter in sugar.
  2. Beat eggs separately.
  3. Add soda, cinnamon, allspice, mace and nutmeg all together with fruit.
  4. Bake in 3 tube pans in pressure cooker at 10 pounds pressure for 1 hour.
  5. Cook in stove 10 minutes at 300°.
  6. (Freezes well.)
