- 1 small onion, chopped fine
- 1/2 green pepper, chopped fine
- 1 can whole kernel corn (undrained)
- 1 can cream-style corn
- 1 small pkg. Jiffy corn muffin mix
- 3 beaten eggs
- 1/2 pt. sour cream
- grated cheese
- Saute the onion and green pepper.
- Combine the corns, corn muffin mix and beaten eggs.
- Blend all ingredients, except sour cream and cheese, together in ovenproof baking dish.
- Top with the sour cream and cheese.
- Bake at 350°, uncovered, for about 45 minutes, or until done.
