Cream Of Spinach Soup

Ingredients

  1. 1 1/2 c. frozen leaf spinach, thawed and drained
  2. 1 1/4 c. chicken broth
  3. 3 Tbsp. margarine
  4. 1/4 c. chopped onion
  5. 2 Tbsp. flour
  6. 1/2 c. whipping cream
  7. dash of pepper
  8. dash of nutmeg

Directions

  1. Blend spinach and 1/2 cup chicken broth in blender until pureed.
  2. In saucepan, melt margarine.
  3. Add onion and saute until tender.
  4. Stir in flour and cook about 1 minute.
  5. Add remaining chicken broth and cook until thickened.
  6. Stir in pureed spinach mixture, whipping cream, pepper and nutmeg.
  7. Heat thoroughly. Makes 2 or 3 servings.
