Peanut Butter Cake(Low Calorie-160 Per Slice)

Ingredients

  1. 2/3 c. unsweetened applesauce
  2. 2 c. sifted cake flour
  3. 3 tsp. baking powder
  4. 1/2 c. reduced fat or natural peanut butter
  5. 1 c. packed brown sugar
  6. 1 tsp. vanilla extract
  7. 2 large eggs
  8. 1 large egg white
  9. 3/4 c. fat free milk

Directions

  1. Place a strainer over a deep bowl.
  2. Spoon applesauce into the strainer and set aside to drain 15 minutes.
  3. You should have about 1/3 cup drained applesauce.
  4. Discard the liquid.
  5. Preheat oven to 350°.
  6. Coat 13 x 9
  7. inch baking dish with nonstick spray.
  8. In medium bowl, combine flour and baking powder.
  9. In a large bowl, with an electric mixer, beat peanut butter 2 minutes.
  10. Add drained applesauce and beat 2 minutes or until creamy.
  11. Beat in vanilla extract.
  12. Beat in eggs, one at a time.
  13. Beat in egg white.
  14. Beat in milk.
  15. Add flour mixture and mix on low until moistened.
  16. Pour batter into prepared baking dish and bake 20-25 minutes or until cake springs back when pressed.
  17. Cool completely in dish on a rack.
