Maryland Crab Cakes

Ingredients

  1. 1 lb. backfin crabmeat
  2. 1 egg
  3. 2 tsp. prepared mustard
  4. 3 to 4 Tbsp. mayonnaise
  5. 1 slice bread, crumbled
  6. 1/2 tsp. salt
  7. 1/2 tsp. paprika

Directions

  1. Combine and mix all ingredients thoroughly.
  2. Chill for 2 hours.
  3. Shape into cakes.
  4. Melt 3 tablespoons of butter in a skillet over a quick fire.
  5. Brown the cakes on both sides. Yield: 6 cakes.
