Potatoes Au Gratin

Ingredients

  1. 6 to 8 baking potatoes, baked in oven with skins on
  2. 1 lb. Velveeta cheese, cut in chunks
  3. 1 c. mayonnaise
  4. 1 onion, chopped
  5. salt and pepper
  6. 6 strips bacon, chopped and sauteed until half cooked
  7. 1/4 c. pimento-stuffed olives, sliced

Directions

  1. Remove skins from cooked potatoes and cut into large dice. Toss with next 4 ingredients.
  2. Pour into greased casserole and sprinkle with bacon and olives.
  3. Bake at 325° for 1 hour.
