Sweet-Sour Red Cabbage

Ingredients

  1. 1 medium red cabbage (1 1/2 to 2 lb.)
  2. 2 Tbsp. vinegar or lemon juice
  3. 4 slices bacon, diced
  4. 1/4 c. brown sugar, packed
  5. 2 Tbsp. flour
  6. 1/2 c. water
  7. 1/4 c. vinegar
  8. 1 tsp. salt
  9. 1/8 tsp. pepper
  10. 1 small onion, sliced

Directions

  1. Remove outside leaves from cabbage.
  2. Wash cabbage.
  3. Shred to measure 5 cups.
  4. In saucepan, heat 1/2-inch salted water (1/2 teaspoon salt to 1 cup water) and 2 tablespoons vinegar to boiling.
  5. Add cabbage. Cover and heat to boiling. Cook about 5 minutes or until crisp-tender. Drain.
