Bananas 'N' Cream Cake

Ingredients

  1. 1/3 c. shortening
  2. 1 1/4 c. sugar
  3. 2 eggs
  4. 1 tsp. vanilla extract
  5. 1 1/4 c. mashed ripe bananas
  6. 2 c. all-purpose flour
  7. 1 1/4 tsp. baking powder
  8. 1 tsp. baking soda
  9. 1/2 tsp. salt
  10. 1 c. (8 oz.) sour cream
  11. 3/4 c. chopped nuts
  12. confectioners sugar

Directions

  1. In a mixing bowl, cream shortening and sugar.
  2. Add the eggs, one at a time, beating well after each addition.
  3. Blend in vanilla.
  4. Add bananas and mix well.
  5. Combine flour, baking powder, baking soda and salt; add to the creamed mixture alternately with sour cream, stirring just until combined.
  6. Stir in nuts.
  7. Pour into a greased and floured 10-inch Bundt or tube pan.
  8. Bake at 350° for 50 minutes or until cake tests done.
  9. Cool 10 minutes in pan before removing to a wire rack to cool.
  10. Dust with confectioners sugar before serving.
  11. Yield:
  12. 12 to 16 servings.
