Vegetable Soup

Ingredients

  1. 1 medium onion, diced
  2. 1 potato, diced
  3. 1 1/2 green sweet peppers, diced
  4. 1/2 c. diced celery
  5. 1 c. diced carrots
  6. 1 c. small macaroni, cooked
  7. 1 1/2 lb. ground turkey or beef
  8. 14 oz. can French green beans
  9. 1 large bay leaf
  10. 1 tsp. Italian seasoning
  11. 1 c. sweet peas
  12. 1 can tomato juice

Directions

  1. Slice the vegetables.
  2. Cook in small amount of water until tender.
  3. Add the cooked macaroni, green beans and peas.
  4. Add bay leaf and Italian seasoning.
  5. Cook beef or turkey until it changes color.
  6. Add to vegetables.
  7. Pour in tomato juice.
  8. Bring to boil. Reduce to simmer.
  9. If soup is too thick, add more tomato juice.
