Tamale Casserole

Ingredients

  1. 1 (16 oz.) can yellow hominy
  2. 1 (4 oz.) can chopped olives
  3. 1 (4 oz.) can mild green chilies
  4. 2 (16 oz.) cans tamales
  5. 2 c. shredded mild Cheddar cheese
  6. 1/4 c. dried chopped onions

Directions

  1. Preheat oven to 350°.
  2. Peel wrappers off tamales and chop in large bowl.
  3. Drain hominy, olives and peppers.
  4. Add them to tamales.
  5. Mix well.
  6. Place in 9 x 13 x 3-inch baking dish.
  7. Spread out evenly.
  8. Sprinkle cheese over top and olives if desired.
  9. Bake 20 to 30 minutes.
  10. Serves 8.
  11. Serve with Spanish rice and corn chips.
