German Potato Salad



  1. 4 lb. new potatoes (red skin)
  2. 2 good size onions, finely chopped
  3. 3 stalks celery, finely chopped
  4. 1/2 c. cider vinegar
  5. 1/2 c. hot bacon drippings
  6. 8 strips bacon, fried and crumbled
  7. salt and pepper to taste
  8. parsley


  1. Boil the potatoes until done.
  2. Peel and slice while still warm.
  3. Stir while pouring on the vinegar and hot grease.
  4. Garnish with the bacon and chopped parsley, if available.
  5. Sprinkle with sugar if too tart due to the vinegar.
