Apfelschaum (Apple Mousse) Recipe

Ingredients

  1. 3 lrg Tart apples, peeled, cored and sliced
  2. 3 x Egg whites Grated peel of 2 lemons
  3. 6 Tbsp. Sugar
  4. 1/4 lt White wine (1 c. plus 1 Tbsp)
  5. 30 gm Butter (2 Tbsp)
  6. 2 Tbsp. Sugar

Directions

  1. Central Swabia
  2. In the wine, stew the apples till tender and mushy.
  3. Force through a sieve.
  4. Add in the sugar and lemon peel.
  5. Meanwhile, beat the egg whites to stiff peaks and then carefully fold into the apple mix.
  6. Fill the whole into a buttered ovenproof dish (Jena Glass*), dust with 2 Tbsp.
  7. sugar, and slowly bake at 250 degrees F for about half an hour.
  8. Serves 4.
