'V' Scottish Leek and potato (tattie) soup

Ingredients
- 2 tbsp butter/margerine
- 1 garlic clove
- 2 good sized leeks (1lb)
- 1 good sized potatoes (1lb)
- 1 litre of veg stock
- 1/2 pints /225mls of milk or cream
- 1 salt and pepper to taste
Directions
- 1..clean and chop leeks
- melt butter/margerine in pan and add leeks and garlic
- fry them on low heat until leeks are soft about 10 mins
- peel potatoes and chop into cubes
- add all remaining ingredients to pan with exception of milk/cream bring soup to boil, then simmer until potatoes are cooked about 20mins
- mash or blend 3/4 of soup,I like to leave it a bit chunky
- just before serving pour milk/cream into soup and stirr well
- if you intend to freeze do not add milk/cream to pan instead add to each soup bowl
