Apricot-Pecan Fruitcake

Ingredients

  1. 2 cups (475 ml) flour
  2. 4 tsp (20 ml). baking powder
  3. 1 tsp (5 ml). salt
  4. 2/3 cup (150 ml) sugar
  5. 1 cup (225 ml) chopped pecans
  6. 3/4 cup (175 ml) finely chopped dried apricots
  7. 2 eggs, well beaten
  8. 1 cup (225 ml) milk
  9. 1/4 cup (60 ml) oil

Directions

  1. Preheat oven to 375 degrees (200 C.).
  2. Grease 9x5x3 inch loaf pan.
  3. In large bowl mix flour, baking powder, salt and sugar.
  4. Add nuts and apricots, tossing lightly.
  5. In small bowl combine remaining ingredients.
  6. Add to dry ingredients, stirring only until moistened.
  7. Pour into prepared pan, pushing batter into corners of pan leaving center slightly hollowed.
  8. Allow to stand for 20 minutes.
  9. Bake for 1 hour.
