Amazing Chewy Crispy Apricot Walnut Energy Bars



  1. 3 cups rolled oats old-fashioned
  2. 2 ounces walnuts chopped, about 1/2 cup
  3. 3 cups puffed wheat cereal or grain, or rice
  4. 2 cups apricots, dried chopped
  5. 1/4 cup flour, all-purpose
  6. 1/2 teaspoon salt
  7. 113 cups silken tofu drained, 12 ounces
  8. 1 large eggs
  9. 1/2 cup canola oil
  10. 1 cup honey
  11. 1 tablespoon vanilla extract
  12. 2 tablespoons lemon zest freshly grated


  1. Preheat oven to 350F.
  2. Coat a large baking sheet with cooking spray.
  3. Mix oats and walnuts in a medium bowl.
  4. Spread mixture on a baking sheet with sides.
  5. Bake until fragrant and light golden, about 10 minutes.
  6. Transfer to a large bowl, then add puffed cereal, dried apricots, flour and salt; stir to combine.
  7. Meanwhile, puree tofu, 1 large egg, oil, honey, vanilla and lemon zest in a food processor or blender until smooth, scraping down the sides as needed.
  8. Make a well in the center of the oat mixture; fold in the tofu mixture until combined.
  9. Spread evenly in the prepared pan.
  10. Bake until firm in the center and golden brown, about 38 minutes.
  11. Let cool completely in the pan on a wire rack.
  12. Cut into bars with a sharp knife.
  13. Serve.
