Almond Apple Muffins

Ingredients

  1. 2 cups almond flour (almond meal)
  2. 3 eggs
  3. 2 tablespoons melted grass-fed butter
  4. 2 tablespoons honey
  5. 2 teaspoons ground cinnamon
  6. 1 -2 apple, cored and chopped in blender
  7. 1 teaspoon baking soda
  8. 1 pinch salt

Directions

  1. Preheat oven to 325 degrees, then core an apple.
  2. Blend apple(s) until finely chopped, but not pureed.
  3. Mix all ingredients together in a bowl, then fill muffin cups until 3/4 full.
  4. Bake for 20 minutes.
  5. Makes around 10 muffins, depending on size.
  6. I usually make these muffins on a Sunday, then have then on hand throughout the week.
  7. I use around two tablespoons of honey for mine, though this creates a semi-savory muffin.
  8. If you like your muffins on the sweet side, then use more honey.
  9. I use the butter from grass-fed cows in mine, but if youd like to avoid dairy entirely, then two to three tablespoons of melted coconut oil would be a fine substitute.
  10. Also, the amount of apples you use depends on the size and taste.
  11. I typically use one large apple.
  12. I also slightly undercook mine (a toothpick doesnt come out completely clean) because I find that they get a little dry if cooked through.
  13. If you prefer a drier muffin, then cook around 23 minutes.
