Aletheas Spicy Breakfast Burrito

Ingredients

  1. 12 lb bacon (cooked) or 12 lb cubed pork (cooked)
  2. 5 whole eggs
  3. 16 ounces salsa or 16 ounces green chili sauce
  4. 12 lb cooked diced potato
  5. 1 cup shredded cheddar cheese
  6. 50 inches flour tortillas
  7. 1 pinch salt
  8. 1 pinch pepper

Directions

  1. Scramble eggs in a large frying pan.
  2. Add cooked meat.
  3. Place half the salsa in the egg and meat mixture.
  4. Add potatoes, bacon and cheese.
  5. Mix together and set aside.
  6. Prepare warmed tortillas on serving plate and add 1 1/2 cups of egg mixture in the center of the tortilla.
  7. Fold tortilla ends in first before rolling.
  8. Serve with side of green chile sauce.
