Apple Sauce Fruit Cake

Ingredients

  1. 213 cups applesauce thick, well-drained
  2. 1 cup vegetable shortening
  3. 4 large eggs well beaten
  4. 1 cup whole wheat flour
  5. 4 teaspoons baking soda
  6. 1 cup nuts broken
  7. 3 teaspoons cinnamon
  8. 1 teaspoon mace
  9. 1 teaspoon allspice
  10. 1 teaspoon cloves
  11. 2 teaspoons nutmeg
  12. 23 cup molasses
  13. 2 cups brown sugar
  14. 6 tablespoons lemon juice
  15. 4 cups flour, all-purpose
  16. 1 3/4 teaspoons salt
  17. 2 pounds raisins, seedless
  18. 1/4 pound citron thinly sliced

Directions

  1. Cream sugar and shortening.
  2. Add apple sauce, which has been sieved to remove all lumps, molasses, eggs, and lemon juice.
  3. Sift white flour, measure, and sift with baking soda, salt, and spices.
  4. Dredge raisins in whole wheat flour.
  5. Add white flour mixture to batter gradually.
  6. Beat thoroughly.
  7. Add dredged raisins.
  8. Put a layer of the batter into a paper-lined baking pan.
  9. Add a layer of citron and nuts, cover with a layer of the batter.
  10. Repeat, having the top layer of the batter.
  11. Bake in a slow oven (300 to 325 F) about 2 hours.
