Asparagus Mimosa

Ingredients

  1. 3 12 lbs fresh asparagus
  2. 3 tablespoons fresh chives, chopped
  3. 1 teaspoon dried tarragon
  4. 1 teaspoon dried basil
  5. 1 shallot, minced
  6. 14 cup white vinegar
  7. 4 teaspoons Dijon mustard
  8. 34 cup extra virgin olive oil
  9. salt and pepper
  10. 3 tablespoons fresh parsley, chopped
  11. 3 hard-boiled eggs, chopped

Directions

  1. Trim asparagus ends.
  2. Steam asparagus for 5 minutes.
  3. Drain and plunge in iced water to stop cooking and keep green color.
  4. Drain on paper towels.
  5. Whisk together chives, tarragon, basil, shallots, salt, pepper and vinegar.
  6. While whisking pour olive oil in slowly.
  7. Mix until smooth.
  8. Chill for at least an hour for flavors to blend.
  9. Lay cooled asparagus on a round serving platter in a spiral fashion.
  10. Drizzle vinaigrette evenly over asparagus.
  11. Mix parsley and eggs, sprinkle over the center of asparagus spears.
  12. Chill before serving.
