Apple Walnut Cake Recipe

Ingredients
- 3 x Large eggs
- 1 c. Vegetable oil
- 2 c. Sugar
- 1 tsp Vanilla
- 4 c. Shredded unpeeled apples
- 2 c. Flour
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1 tsp Grnd cloves
- 1/2 c. Raisins
- 3/4 c. Walnuts, minced
- 1 c. Butter or possibly margarine, softened
- 5 Tbsp. Flour
- 1 c. Lowfat milk
- 1 c. Powdered Sugar
- 1 tsp Vanilla
- 1/2 c. Walnuts, minced
Directions
- Beat Large eggs and oil in mixing bowl till foamy; add in sugar and vanilla, mix well.
- Add in apples; set aside.
- In bowl mix dry ingredients together; add in walnuts and raisins.
- Add in dry ingredients to egg mix; beat slightly.
- Pour into a greased 9X13 pan bake 350 for 25 min, or possibly till tests done.
- Cold.
- For frosting heat butter in saucepan; stir in flour till mix bubbles.
- Add in lowfat milk, stirring with whisk till thickened.
- Cold.
- Add in sugar and vanilla; mix till smooth and blended.
- Frost cake and sprinkle with additional walnuts.
