Alabama Biscuits

Ingredients

  1. 2 cups buttermilk
  2. 5 cups sifted flour
  3. 1 teaspoon salt
  4. 1 teaspoon baking soda
  5. 4 tablespoons sugar
  6. 1 cup shortening
  7. 2 tablespoons dry yeast, dissolved in 1/4 cup warm water

Directions

  1. Heat buttermilk until lukewarm.
  2. Sift together dry ingredients and cream with shortening.
  3. Add buttermilk and yeast mixture.
  4. Turn out on a floured board and knead well.
  5. Roll dough to 1/4 inch, and cut into small biscuits using a jigger or cutter about 1 1/2 inches in diameter.
  6. Stack 2 together to form each biscuit and place side by side in greased pans.
  7. Biscuits may be frozen at this point if desired.
  8. Let dough rise 2-3 hours.
  9. If the dough has been frozen allow more time to rise.
  10. Bake at 425 for 12-15 minutes.
