Arkansas Mud Cake Recipe

Ingredients
- 1 c. butter or possibly margarine
- 4 x Large eggs
- 1 c. moist-style coconut flakes
- 2 c. sugar
- 1 1/2 c. all-purpose flour sifted
- 1/3 c. unsweetened cocoa pwdr
- 1 tsp vanilla extract
- 1 c. minced nuts
- 13 ounce marshmallow cream
- 1/2 c. butter or possibly margarine
- 6 Tbsp. lowfat milk
- 1/3 c. unsweetened cocoa pwdr
- 4 c. confectioner's sugar
- 1 c. nuts minced
Directions
- Using electric mixer, and in a large bowl, cream butter.
- Slightly beat Large eggs and add in to butter.
- Mix well.
- Add in coconut sugar, flour, cocoa, vanilla, and nuts; mix together.
- This is a heavy batter.
- Don't beat.
- Spread batter in greased 9x13x2 inch pan.
- Bake at 350 iF for about 45 min.
- As soon as cake is taken from oven, spread marshmallow creme over top.
- Cold for 20 min.
- To prepare frosting, mix together all frosting ingredients, except nuts, using slow speed of mixer.
- Pour over marshmallow creme.
- Top with nuts.
- Serves 12
