Almond Ice Cream

Ingredients

  1. 1/2 cup sliced almonds
  2. 2 tablespoons sugar
  3. Pinch of salt
  4. 1 cup sliced almonds
  5. 1 1/2 cups heavy cream
  6. 1 1/2 cups whole milk
  7. 23 cup sugar
  8. 18 teaspoon fine sea salt
  9. 6 large egg yolks
  10. 1/4 teaspoon almond extract

Directions

  1. In a medium saucepan, cook 1/2 cup sliced almonds with the sugar and the salt over medium heat until deeply golden and caramelized, about 10 minutes.
  2. Transfer to a plate.
  3. Reserve.
