Almond Ice Cream

Ingredients
- 1/2 cup sliced almonds
- 2 tablespoons sugar
- Pinch of salt
- 1 cup sliced almonds
- 1 1/2 cups heavy cream
- 1 1/2 cups whole milk
- 23 cup sugar
- 18 teaspoon fine sea salt
- 6 large egg yolks
- 1/4 teaspoon almond extract
Directions
- In a medium saucepan, cook 1/2 cup sliced almonds with the sugar and the salt over medium heat until deeply golden and caramelized, about 10 minutes.
- Transfer to a plate.
- Reserve.
