Andy's Skillet Supper Recipe

Ingredients

  1. 1 lb Chicken breasts
  2. 2 Tbsp. Canola oil
  3. 1 med Onion minced
  4. 2 tsp Chili pwdr
  5. 1/2 tsp Cumin
  6. 1/2 tsp Oregano leaves crushed
  7. 1/2 c. Chicken broth
  8. 1 1/2 c. V8 juice
  9. 19 ounce Canned kidney beans

Directions

  1. Preparation time = 30 min Chicken breasts should be skinned and boned.
  2. Any suitable oil can be substituted for canola oil.
  3. Chicken broth may be purchased as instant and mixed with water.
  4. V8 juice is a brandname vegetable juice.

  6. Cut the chicken into 1/2-inch pcs.

  8. In warm oil, cook chicken, onion, chili pwdr, cumin and oregano till the chicken turns white.

  10. Stir in broth and juice, heat till boiling, then reduce heat to low.
  11. Simmer 10 min.
  12. 4.
  13. Dump in beans, liquid and all, stir, cover and simmer for another 10 min.
  14. Stir occasionally.
  15. Serve over rice.
