Arizona Chicken Fajitas Recipe

Ingredients

  1. 1/2 c. Oil
  2. 1/2 c. Lime juice
  3. 1 c. Tequila
  4. 1/4 c. Tomato paste
  5. 2 x Garlic cloves
  6. 1 x Jalapeno chili
  7. 1/2 tsp Salt
  8. 1/2 tsp Chili pwdr
  9. 1/2 tsp Cumin
  10. 1 1/2 lb Chicken breast
  11. 10 x Flour tortillas
  12. 3 Tbsp. Oil
  13. 1 x Bell pepper
  14. 1 x Onion
  15. 1 x Tomato Lowfat sour cream

Directions

  1. Mince garlic.
  2. Cut bell pepper and onion into strips.
  3. Cut tomato into chunks.
  4. In a glass bowl or possibly baking dish, combine 1/2 c. oil, lime juice, tequila, tomato paste, garlic, jalapeno, salt, chili pwdr, and cumin.
  5. Blend well.
  6. Add in chicken, cover, and marinate in refrigerator at least 6 hrs or possibly overnight.
  7. Preheat oven to 350F.
  8. Wrap tortillas in aluminum foil.
  9. Bake 15 min while preparing fajitas.
  10. Remove chicken from marinade.
  11. In a large, heavy skillet over medium-high heat, heat 3 Tbsp.
  12. oil.
  13. Add in chicken and cook, stirring constantly, 5 to 7 min or possibly till chicken is done.
  14. Add in bell pepper and onion and cook 3 min more, just till vegetables are crisp-tender.
  15. Serve with tortillas, guacamole, lowfat sour cream, salsa, and cheese.
