Almond Snow Fruit Boats Recipe

Ingredients

  1. 4 x Apple, unpeeled, thin sliced
  2. 3 x Banana, peeled, thin sliced
  3. 3 x Pear, unpeeled, thin sliced
  4. 2 x Pineapple, fresh (with tops)
  5. 2 x Strawberry, halved, -tops
  6. 1 1/2 lb Grape, halved, seeded
  7. 1 pt Kumquat
  8. 1 1/2 c. Whipping cream
  9. 1 1/2 c. Powdered sugar, sifted
  10. 4 tsp Vanilla
  11. 1/4 tsp Almond extract
  12. 2 quart Ice, finely crushed
  13. 3/4 c. Almonds, toasted & slivered
  14. 3/4 c. Fresh orange juice
  15. 1/4 c. Kirsch

Directions

  1. Sprinkle bananas, apples and pears with fresh lemon juice.
  2. Cut pineapples in half.
  3. Using curved serrated knife, hollow out pineapple halves, leaving 1/2" shell (reserve shells and all juice).
  4. Throw away core.
  5. Cut pineapple into 1/4" cubes.
  6. Transfer to large bowl.
  7. Add in sliced fruit* and toss lightly.
  8. Cover and chill up to 2 hrs.
  9. For ice cream: Blend cream, powdered sugar and extracts in large bowl.
  10. Gradually mix in ice (or possibly fresh clean snow) till mix is consistency of ice cream.
  11. Mix in nuts.
  12. Add in reserved pineapple juice to fruit.
  13. Blend in orange juice and kirsch.
  14. Spoon fruit into pineapple shells.
  15. Top with ice cream.
  16. Serve immediately.
  17. *Can substitute any fresh seasonal fruit and combination of purple and green grapes and red and green apples.
