Apricot Lamb

Ingredients

  1. 1 12 cups chopped onions
  2. 2 tablespoons olive oil
  3. 1 (3 lb) boneless lamb shoulder, cubed
  4. 1 teaspoon cumin
  5. 1 teaspoon cinnamon
  6. 1 teaspoon coriander
  7. 12 teaspoon salt
  8. 14 teaspoon pepper
  9. 12 cup dried apricot, sliced
  10. 13 cup orange juice
  11. 1 tablespoon ground almonds
  12. 12 teaspoon orange zest
  13. 1 14 cups chicken broth
  14. 1 tablespoon toasted sesame seeds

Directions

  1. In lg skillet, saute onion in oil for 1 minute.
  2. Add lamb, and the spices.
  3. Cook and stir for 5 minutes.
  4. Add apricots, orange juice, almonds, and orange zest.
  5. Put into a 3 quart baking dish.
  6. Stir in broth.
  7. Cover and bake at 350F for 1-1/2 hours.
  8. Sprinkle with sesame seeds.
