Amazing Chewy Oatmeal Raisin Cookies

Ingredients

  1. 1 1/2 cup raisins
  2. 3/4 cup sugar
  3. 1 1/4 cup brown sugar
  4. 1 cup butter, softened
  5. 2 eggs
  6. 1 tsp vanilla extract
  7. 1/4 tsp almond extract
  8. 2 cup flour
  9. 1 tsp baking soda
  10. 1 1/2 tsp coarse sea salt
  11. 2 tsp ground cinnamon
  12. 3 cup quick-cook oats

Directions

  1. Put raisins in microwave safe bowl, cover with water.
  2. Microwave for 5 minutes.
  3. Let soak for about 5 minutes more, then strain.
  4. Set aside.
  5. Add sugar and brown sugar to large bowl.
  6. Add softened butter (or margarine or vegan alternative) and mix with mixer until consistent texture.
  7. Add eggs, vanilla, and almond extracts to wet mix, blend until smooth.
  8. Sift or mix together flour, baking soda, coarse sea salt, and cinnamon.
  9. Add to wet ingredients and hand mix until consistent texture.
  10. Add oats and strained raisins, and mix thoroughly.
  11. Cover and refrigerate for one hour.
  12. Set oven to 375 F. Grease baking sheet.
  13. Scoop into tablespoon sizes and place 1.5-2" apart on sheet.
  14. Press in crossing pattern with fork.
  15. Sprinkle with sugar if you'd like.
  16. :) Bake for 10 minutes.
  17. Let them set for at least two minutes (I know it's hard!).
  18. Whether you eat them hot, warm, or room temperature, they'll still be chewy!
