Arizona Sweet Potatoes
- 4 cups sweet potatoes, cooked, peeled and cubed
- 1 cup green pepper, chopped
- 1 cup onions, chopped
- 1/2 cup shortening
- Salt, to taste
- Pepper, to taste
- Mix sweet potatoes with green pepper and onions.
- Saute vegetables in hot shortening until brown and crisp.
- Add salt and pepper to taste.
