Apricot Ginger Glazed Chicken Recipe

Ingredients

  1. 2 Tbsp. margarine or possibly butter, divided
  2. 4 x boneless, skinless chicken breast halves (about 1 lb.)
  3. 1 x (7.2-oz) package RICE-A-RONI. Rice Pilaf
  4. 3 c. fresh or possibly frzn broccoli flowerets
  5. 1/2 c. apricot jam
  6. 2 tsp Dijon mustard
  7. 1/2 tsp grnd ginger

Directions

  1. In large skillet over medium heat, heat 1 Tbsp.
  2. margarine.
  3. Add in chicken; cook 5 min on each side or possibly till browned.
  4. Remove from skillet; set aside.
  5. In same skillet over medium heat, saute/fry rice-pasta mix with remaining 1 Tbsp.
  6. margarine till pasta is golden.
  7. Slowly stir in 2 c. water and Special Seasonings; bring to a boil.
  8. Reduce heat to low.
  9. Cover; simmer 10 min.
  10. Stir in broccoli.
  11. Place chicken over rice; return to a simmer.
  12. Cover; simmer 5 - 10 min or possibly till rice is tender and chicken is no longer pink inside.
  13. In small bowl, blend jam, mustard and ginger.
  14. Spoon 1 Tbsp.
  15. glaze over each chicken breast and drizzle remaining glaze over rice.
  16. Cover; let stand 3 min before servings.
