Angel Hair Pasta with Tuna and Tomato Sauce

Ingredients

  1. 2 tablespoons (1/4 stick) butter
  2. 2 tablespoons olive oil
  3. 1/2 red bell pepper, seeded, chopped
  4. 1/2 green bell pepper, seeded, chopped
  5. 1 tablespoon minced jalapeno chili
  6. 2 garlic cloves, minced
  7. 1 1/2 drained canned diced tomatoes
  8. 1/2 cup bottled clam juice
  9. 1/3 cup chopped fresh cilantro
  10. 1/2 cup dry white wine
  11. 1/4 cup water
  12. 3 tablespoons fresh lemon juice
  13. 1/4 teaspoon crushed dried red pepper
  14. 1/2 cup all purpose flour
  15. 1/2 teaspoon garlic powder
  16. 4 6- to 8-ounce tuna steaks
  17. 12 ounces angel hair pasta
  18. 1/4 cup freshly grated Parmesan cheese
  19. Additional chopped fresh cilantro

Directions

  1. Melt 1 tablespoon butter with 1 tablespoon oil in heavy large skillet over medium-high heat.
  2. Add both bell peppers, jalapeno and minced garlic; saute until peppers are almost tender, about 5 minutes.
  3. Add tomatoes, clam juice, 1/3 cup cilantro, wine, water, lemon juice and dried red pepper.
  4. Bring to boil.
  5. Reduce heat; simmer until flavors blend, about 5 minutes.
  6. Season with salt and pepper.
  7. Mix flour and garlic powder in shallow bowl.
  8. Season tuna with salt and pepper.
  9. Coat with flour mixture, shaking off excess.
  10. Melt remaining 1 tablespoon butter with 1 tablespoon oil in another heavy large skillet over high heat.
  11. Add tuna to skillet and saute until just opaque on the outside, about 2 minutes per side.
  12. Bring sauce to simmer over medium heat.
  13. Add tuna; cook until opaque in center, about 2 minutes.
  14. Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite.
  15. Drain pasta.
  16. Divide among 4 plates.
  17. Place tuna atop pasta.
  18. Spoon sauce over.
  19. Sprinkle with Parmesan and cilantro and serve.
