Apple Topped Oatcakes Recipe

Ingredients

  1. 1 1/2 c. Warm lowfat milk
  2. 3/4 c. Old-fashioned oats
  3. 1 x Egg, beaten
  4. 2 Tbsp. Vegetable oil
  5. 2 Tbsp. Molasses
  6. 1 c. All-purpose flour
  7. 1 1/2 tsp Baking pwdr
  8. 3/4 tsp Grnd cinnamon
  9. 1/4 tsp Grnd ginger
  10. 1/4 tsp Baking soda
  11. 1/4 tsp Salt
  12. 3 x Egg whites
  13. 2 Tbsp. Butter or possibly margarine
  14. 5 med Tart apples, peeled/sliced
  15. 1 Tbsp. Lemon juice
  16. 1 tsp Grated lemon peel
  17. 1/2 c. Sugar
  18. 1 Tbsp. Cornstarch
  19. 1/8 tsp Grnd nutmeg

Directions

  1. In a large bowl, combine lowfat milk and oats; let stand for 5 min.
  2. Stir in egg, oil and molasses.
  3. Combine dry ingredients; stir in oat mix just till moistened.
  4. Beat egg whites till soft peaks form; fold gently into batter.
  5. Set aside.
  6. Heat butter in a skillet unitl foamy.
  7. Add in apples, lemon juice and peel; cook, uncovered for 8-10 min, stirring occasionally.
  8. Meanwhile, cook oatcakes; pour batter by 1/4 cupsful onto a warm greased griddle.
  9. Cook till bubbles form; turn and cook till browned on other side.
  10. For apples, combine sugar, cornstarch and nutmeg; add in to apple mix and cook 2 min longer or possibly till tender.
  11. Serve hot over oatcakes.
  12. Yield: 6-8 servings.
