Asian Chicken Salad

Ingredients

  1. 23 cup rice vinegar
  2. 14 cup low sodium soy sauce
  3. 2 tablespoons brown sugar
  4. 1 tablespoon dark sesame oil
  5. 1 teaspoon hot sauce
  6. 4 boneless skinless cooked chicken breasts, cut up into 1/4 inch slices
  7. 4 cups sliced romaine lettuce or 4 cups butter lettuce
  8. 1 large bell pepper, julienned
  9. 1 bunch scallion, sliced
  10. 2 tablespoons dry roasted peanuts, chopped
  11. mandarin orange (optional)

Directions

  1. In a large bowl combine rice vinegar, soy sauce, sugar, sesame oil and hot sauce.
  2. Add chicken, lettuce, red bell pepper and scallions to vinegar mixture; toss well.
  3. Sprinkle with peanuts and serve.
