Apple Sour Cream Coffee Cake



  1. 1/3 cup packed light brown sugar
  2. 1/4 cup granulated sugar
  3. 1 tsp ground cinnamon
  4. 1 cup chopped pecans
  5. 1/2 cup softened butter
  6. 1 cup granulated sugar
  7. 2 large eggs
  8. 2 cup sifted all purpose flour
  9. 1 tsp baking soda
  10. 1 tsp baking powder
  11. 1/2 tsp salt
  12. 1 1/2 cup sour cream
  13. 1 tsp vanilla extract
  14. 4 large gala apples peeled, cored and sliced
  15. 1 cup chopped walnuts
  16. 1/2 cup toffee chips


  1. Preheat oven to 325F,
  2. Spray a 9-by-9 inch baking pan.
  3. Prepare the topping.
  4. Combine all Ingredients and mix well.
  5. this is when I also add chopped pecans and toffee chips
  6. In a bowl, cream together butter, sugar and eggs.Add vanilla extract.
  7. In a separate bowl mix flour, baking soda, baking powder, and salt.
  8. Now pour your wet ingredients into flour mixture mix well..Now add your sour cream.
  9. Mix well
  10. Pour half of the batter into the pan.
  11. Layer with half of the apple slices, then half of the topping.
  12. Pour in the remaining batter, layer with the remaining apples (keep 3 slices for decoration), then add the rest of the topping.
  13. Arrange the remaining slices on top.
  14. Bake for 1 hour, or until a toothpick inserted in the center comes out clean.
  15. Let cool and enjoy
  16. I also bake mine after the first hour at a higher temp of 350 for about 20 minutes too give the topping an extra crunch.
