Asparagus Cream Soup

Ingredients

  1. 4 tablespoons vegetable shortening
  2. 1/2 cup onions chopped
  3. 4 packages asparagus frozen cut (10 oz)
  4. 2 cups chicken broth
  5. 8 each egg yolks slightly beaten
  6. 5 cups milk
  7. 2 teaspoons salt
  8. 1/2 teaspoon black pepper
  9. 8 red hot pepper sauce

Directions

  1. In medium saucepan melt Crisco; add onion and cook until tender.
  2. Add frozen asparagus and chicken broth; cook uncovered 10 minutes over high heat.
  3. Transfer mixture to blender and puree.
  4. (Or force mixture through a find wire sieve.)
  5. Add beaten egg yolks.
  6. Return mixture to saucepan.
  7. Stir in milk, salt, pepper and hot pepper sauce.
  8. Reheat before serving; DO NOT BOIL.
