All-in-One Spaghetti Frittata

Ingredients

  1. 225 g (1/4 of 900-g pkg.) spaghetti, uncooked
  2. 1 Tbsp. olive oil
  3. 1 medium onion, sliced King Sooper's 1 lb For $0.99 thru 02/09
  4. 2 cups sliced fresh mushrooms
  5. 1 medium zucchini, sliced
  6. 1 can (19 fl oz/540 mL) Italian-style stewed tomatoes, undrained
  7. 8 eggs, lightly beaten
  8. 1 cup Kraft 4 Cheese Italiano Shredded Cheese, divided

Directions

  1. Preheat oven to 350F.
  2. Cook pasta as directed on package.
  3. Meanwhile, heat oil in large ovenproof skillet on medium-high heat.
  4. Add onions and mushrooms; cook and stir 5 min.
  5. or until onions are crisp-tender.
  6. Add zucchini and tomatoes with their liquid.
  7. Cook 10 min., or until most of the liquid has evaporated, stirring occasionally.
  8. Place pasta, eggs and 1/2 cup of the cheese in large bowl; mix well.
  9. Add to vegetables in skillet; stir until well blended.
  10. Cook on medium-low heat 5 min.
  11. or until bottom of frittata is set.
  12. Sprinkle with remaining 1/2 cup cheese.
  13. Bake 10 min.
  14. or until centre is set.
  15. Cut into 8 wedges to serve.
