African Spinach Salad



  1. 1 onion, chopped
  2. 1 green pepper, chopped
  3. 1 tablespoon vegetable oil
  4. 1 tomatoes, roughly chopped
  5. 1 lb fresh spinach, stems removed
  6. salt and pepper, to taste
  7. 14 cup creamy peanut butter


  1. Cook the onion and green pepper in the oil in a large saucepan until the onion is tender.
  2. Add the tomato and spinach.
  3. Cover and simmer until the spinach is tender (about 5 minutes).
  4. Stir in the salt, pepper, and peanut butter.
  5. Heat just until hot (don't let the spinach overcook).
