Annihilator Quesadillas With Turkey



  1. 6 8-inch flour tortillas
  2. 8 ounces grated cheddar cheese or 8 ounces queso blanco
  3. 1 lb sliced turkey
  4. 2 dark dried chipotle chiles, ground fine (chili chipotle meco)
  5. 2 tablespoons ancho chilies, ground fine
  6. 5 tablespoons canola oil
  7. 14 cup cider vinegar
  8. 1 teaspoon honey
  9. 3 ounces tabasco brand TABASCO brand Chipotle Pepper Sauce
  10. 14 teaspoon black pepper
  11. 1 large white onion, peeled,halved and sliced diagonally
  12. 1 medium green pepper, cleaned and sliced thinly
  13. 3 cloves garlic, peeled,slightly smashed
  14. 8 ounces sour cream, if desired


  1. Mix ground peppers, 2 T canola oil, vinegar, honey, Tabasco and black pepper.
  2. Pour over the sliced turkey in a bag or sealable container.
  3. Marinade at least 2 hours, overnight is better.
  4. Coat onion slices, pepper slices and garlic in remaining oil.
  5. Grill over med high heat until onions and peppers are striped nicely.
  6. Weight the garlic to hold it on the grill surface.
  7. Grill until softened and slightly browned.
  8. Mince garlic and mix with onions and peppers.
  9. Set aside.
  10. Remove turkey from marinade and grill until striped, turning once.
  11. Remove turkey and set aside.
  12. In frying pan or on flat griddle set to high lay a tortilla, sprinkle with cheese.
  13. When cheese is slightly melted add vegetables and turkey.
  14. FOld tortilla over and weight down.
  15. When cheese begin melting out of tortilla, flip tortilla and reweight.
  16. Remove from grill and slice into 4 section.
  17. Repeat with remaining ingredients.
  18. Serve with sour cream if desired.
  19. The tortillas can usually be cooked 2 at a time so the cooking time is usually a lot less than 15 minutes.
