Asian Seafood on Lemongrass Skewers

Ingredients

  1. 8 stalks lemongrass
  2. 500 g prawns, peeled and deveined
  3. 500 g white fish fillets, chopped
  4. 2 tablespoons soy sauce
  5. 2 tablespoons lime juice
  6. 2 tablespoons brown sugar
  7. 2 cm fresh ginger, grated
  8. 12 bunch coriander, roughly chopped
  9. olive oil flavored cooking spray
  10. lime wedge, to serve

Directions

  1. Peel and trim lemongrass.
  2. Place next 7 ingredients in food processor.
  3. Process until all minced and combined.
  4. With wet hands mould mixture around lemongrass.
  5. Place on tray and cover, refrigerate for 20 minutes.
  6. Preheat bbq.
  7. Spray each stick and cook turning often for at least 5 minutes each side (or more depending on taste).
  8. Should be golden.
  9. Serve with lime.
