Apple Topped Cake

Ingredients

  1. 3 tablespoons butter, softened
  2. 34 cup sugar
  3. 1 egg
  4. 1 egg white
  5. 1 cup vanilla yogurt
  6. 13 cup unsweetened applesauce
  7. 2 tablespoons canola oil
  8. 2 teaspoons vanilla extract
  9. 2 cups all-purpose flour
  10. 1 teaspoon baking powder
  11. 12 teaspoon baking soda
  12. 12 teaspoon salt
  13. 1 12 cups chopped peeled apples
  14. 2 tablespoons chopped walnuts
  15. 1 tablespoon brown sugar
  16. 12 teaspoon ground cinnamon
  17. 18 teaspoon ground allspice

Directions

  1. In a large mixing bowl, beat butter and sugar until crumbly, about 2 minute.
  2. Add the egg, egg white, yogurt, applesauce, oil, and vanilla; beat until smooth.
  3. Combine the dry ingredients, add to yogurt mixture, beating just until moistened.
  4. Pour into a 9 in springform pan coated with nonstick cooking spray.
  5. Sprinkle with apples and walnuts.
  6. Combine the brown sugar, cinnamon, and allspcie, sprinkle over top.
  7. Bake @ 375 for 47-52 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool on a wire rack.
  9. Run a knife around the edge of the pan to loosen.
  10. Remove sides of pan.
  11. Regrigerate left overs.
