After-The Holidays Turkey Soup

Ingredients

  1. 1 roasted turkey carcass, plus any leftover meat, skin removed
  2. 3 yellow onions, cut into 1 inch cubes
  3. 3 boiling potatoes, cut into 1 inch cubes
  4. 3 carrots, cut into 1 inch cubes
  5. 3 bay leaves
  6. 2 garlic cloves, whole
  7. 12 cup fresh parsley, coarsely chopped
  8. 1 tablespoon dried thyme
  9. 1 teaspoon dried sage
  10. 2 12 quarts chicken broth
  11. salt and pepper

Directions

  1. Put all the ingredients except the salt and pepper in a large pot.
  2. Bring to a boil over medium heat.
  3. Reduce the heat and simmer gently for about 1 hour.
  4. Remove the turkey carcass and pick off any meat attached to it, adding the meat to the pot.
  5. Season the soup to taste with salt and pepper and serve.
