3 Step Greek Chicken & Rice Skillet

Ingredients

  1. 13 cup greek vinaigrette dressing (Kraft)
  2. 1 lb chicken thigh (cut into chunks)
  3. 2 teaspoons dried oregano leaves
  4. 4 cups green peppers, brocc, carrots (salad bar mix)
  5. 14 12 ounces chiken broth
  6. 2 cups Minute brown rice
  7. 1 lemon

Directions

  1. Heat dressing in skillet on medium heat.
  2. Add chicken ; sprinkle with oregano.
  3. Cook 5 minutes, stirring once.
  4. Add veggies, and broth; simmer 5 minutes.
  5. Stir in rice; cover.
  6. Simmer 5 minutes.
  7. Turn off heat.
  8. Let stand, covered, 5 minutes or until liquid is absorbed.
  9. Grate 1tsp lemon peel; sprinkle over chicken.
  10. Cut lemon into wedges serve wit chiken and rie mixture.
