Alcaparrado Chicken with Mac & Cheese

Ingredients

  1. 1 broiler-fryer chicken (3 lb.), cut into pieces
  2. 3/4 cup sofrito sauce base (recaito)
  3. 4 slices OSCAR MAYER Smoked Ham, finely chopped
  4. 2 cans (8 oz. each) tomato sauce
  5. 1/4 cup manzanilla olives, quartered
  6. 1 Tbsp. capers
  7. 2 pkg. (7-1/4 oz. each) KRAFT Macaroni & Cheese Dinner
  8. 4 KRAFT Singles, cut up
  9. 1 pkt. seasoning with coriander and annatto
  10. 2 Tbsp. KRAFT Grated Parmesan Cheese

Directions

  1. Cook chicken in large skillet on medium-high heat 5 min.
  2. or until browned on both sides, turning after 3 min.
  3. Remove chicken from skillet; cover to keep warm.
  4. Add sofrito sauce and ham to skillet; cook 3 min., stirring frequently.
  5. Stir in tomato sauce, olives and capers.
  6. Top with chicken; cover.
  7. Cook 25 min.
  8. or until chicken is done (165 degrees F).
  9. Meanwhile, prepare Dinners in large saucepan as directed on package.
  10. Add Singles and seasoning; stir until Singles are melted.
  11. Serve chicken over Dinner mixture.
  12. Top with Parmesan.
